I think the matte is in the base and clear. I would not think polishing would make it shiny or wetter looking. It would just make it clearer and defect free.
They have matte or satin paint at lowes (I know different paint) that you can get. I just painted some furniture with satin black and it worked nice. Now I have satin clear on it and it doesn't have the gloss that I was avoiding. I would assume auto paint would be about the same.
That matte finish looks nice but also looks like you can write on it with chaulk.
