Manual for just about everything but Tv when I want to worry about changing just one value.

All you really need to do to adjust white balance manually is have a white card with you in whatever lighting situation you are in. I know some people used to use this gray card or something like that but I know most people will point their camera at a white surface and press the WB button and that's how you calibrate your white balance in odd lighting situations. Or you can just shoot in RAW and if you don't like the colors you got with the Automatic setting, you can change the white balance on the fly in photoshop because of the RAW data.

Mostly use Aperature priority using matrix meter mode. Occasionally I will use the spot meter. Usually in 100 iso.

The other 25% of the time I am in Intelligent Auto Mode.

I was told I'd shoot mostly in Av mode, but find Tv more useful more of the time.

When taking pictures of a really shiny car, I almost always have to turn manual focus off too.
